Single-core vs multi-core scores

In some geekbench tests I've seen, the M3 chip scores better than the M1 pro chip in single core tasks, while they don't differ much in multi-core. Now how does this translate to real life situations? I read that apps with low thread counts rely more on single core tasks, but what exactly is the threshold for low thread count? What apps benefit from a high single core score? Thanks
